From MamaHun’s man-friend Walt, this is a basic quiche recipe that works with any veggies (don’t tell Walt but meat might be ok too).
Recipe: Walter’s Quiche
Ingredients
- 1 frozen pie crust (Marie Callender’s works best), thawed
- 3 Tablespoons olive oil
- 1 cup chopped onion
- 1 cup tomatoes (in winter, use canned fire-roasted)
- 3 cloves garlic, minced
- 1 cup broccoli, cut into 2-inch stalks
- 3 eggs
- 1 Tablespoon salt mix (we like Monterey Steak seasoning)
- 1/4 cup parmesan cheese, grated
- 1 cup milk
- 1/2 cup TVP sausage crumble
- 1/2 cup butter or margarine
- 2/3 cup water
- More veggies as desired (pictured: peppers and asparagus)
Instructions
- Preheat oven to 350 degrees.
- Pre-bake the pie shell according to directions on package. If using a Marie Callender’s shell, you can double this recipe.
- Saute onions, garlic and extra veggies 5 minutes over medium heat, then put them in the shell.
- Steam or simmer broccoli in water until heated through (but not fully cooked). Add to shell.
- In a bowl, beat the eggs. Stir in spice, cheese and milk. Pour the mixture over the veggies.
- Prepare TVP according to this vegan sausage recipe. Sprinkle on top of the quiche.
- Bake on a sheet pan in the middle of the oven, 30-35 minutes until just set.
- Let cool 10 minutes before chowing down.
