Recipe: Walter’s Veggie Quiche

From MamaHun’s man-friend Walt, this is a basic quiche recipe that works with any veggies (don’t tell Walt but meat might be ok too).

Recipe: Walter’s Quiche

Vegetarian quiche ingredientsIngredients

  • 1 frozen pie crust (Marie Callender’s works best), thawed
  • 3 Tablespoons olive oil
  • 1 cup chopped onion
  • 1 cup tomatoes (in winter, use canned fire-roasted)
  • 3 cloves garlic, minced
  • 1 cup broccoli, cut into 2-inch stalks
  • 3 eggs
  • 1 Tablespoon salt mix (we like Monterey Steak seasoning)
  • 1/4 cup parmesan cheese, grated
  • 1 cup milk
  • 1/2 cup TVP sausage crumble
  • 1/2 cup butter or margarine
  • 2/3 cup water
  • More veggies as desired (pictured: peppers and asparagus)

Instructions

  1. Preheat oven to 350 degrees.
  2. Pre-bake the pie shell according to directions on package. If using a Marie Callender’s shell, you can double this recipe.
  3. Saute onions, garlic and extra veggies 5 minutes over medium heat, then put them in the shell.
  4. Steam or simmer broccoli in water until heated through (but not fully cooked). Add to shell.
  5. In a bowl, beat the eggs. Stir in spice, cheese and milk. Pour the mixture over the veggies.
  6. Prepare TVP according to this vegan sausage recipe. Sprinkle on top of the quiche.
  7. Bake on a sheet pan in the middle of the oven, 30-35 minutes until just set.
  8. Let cool 10 minutes before chowing down.
