Food scraps are actually food. They have nutrition and flavor galore–but most of us aren’t accustomed to thinking of potato peels and lemon rinds as food. In fact, Americans throw away 25% of the food we prepare. Way to go, nation.
Next time you cook, especially if you don’t have worms or other pets to feed, think about what you can do with that extra food. Does it really have to go in the garbage?
CHOW’s got a great list of ideas to get you started. For example:
- Zest lemons, limes and oranges, then freeze the zest for later use.
- Save unwaxed cheese rinds (and just about anything else) to add to soups.
- Replant the ends of green onions.

I’m all over that zesty stuff.
sweet! freezing my zests now…
I’ve been living in a desert wasteland for 4.5 years and my compost is healthy and fertile. It was SO frickin’ awesome to create healthy, potential laden soil in harsh dry desert, scrub filled world from all those food scraps (the meat goes to the doggie). Made me feel kinda competent. Hauling used bath water to the compost pile was a PAIN, but rather heady as well.
That is AWESOME.
